Meet Rachel

Our Reservationist, Rachel, is energetic and full of heart. She has only been part of the Roundhouse family for 8 months, but due to her infectious smile and positive attitude with our guests and fellow colleagues, she has become an irreplaceable part of our team.
Because Rachel is so warm hearted and is a ray of sunshine in all of our lives, it’s no wonder her favourite dish looks like summer on a plate.

Honey Avocado Mango Salad

2 avocados
2 mangoes (cubed)
2 cups pineapple (cubed)
2 oranges (bite size pieces)
1/4 cup gorgonzola cheese
1/2 cup walnuts (chopped & toasted) or pecans (toasted)
Lemon juice to flavour

4 TB extra virgin olive oil
3 TB honey
2 TB apple cider vinegar
1 TB lemon juice
2 TB fresh orange juice
2 pinches of salt
Ground black pepper

Mix in all the dressing ingredients and place in the fridge.
Combine the chopped mangoes, pineapples, oranges and onion then mix well. Sprinkle lemon juice on the avocado and gently mix in – be sure to squash the avo.
Plate salad and pour chilled dressing over. Sprinkle the nuts and cheese over the top of the salad.
*Can be served on a bed of lettuce with cucumber.
